Who doesn’t love cheese? I, for one, just adore it. Which is no surprise for you as you often see cheese filled posts from me, such as Cheese Piggy Biscuits, Cheese Biscuits and so on.
Today I will share with you, yet another cheesy creation, my rustic Cheese Crackers that could be served on their own or with your favorite soup like Hungarian Bean Soup.
Not much needed for this recipe, perhaps the most important thing that you need to bring is your patience as the 15 minute baking time seems impossibly long when your senses are overwhelmed by the tantalizing scent of these cheesy bites baking in the oven.
Try to use good cheese or this recipe. I usually grate a good old piece of Cheddar Cheese but today I used Swish instead.
INGREDIENTS
- 170 gram of grated cheddar cheese (today grated Swiss Cheese)
- 1/2 stick of unsalted butter cut into cubes
- 3/4 cup flour
- 1/2 tsp caraway seeds
- 1/2 tsp salt
- 1/2 tsp of crushed red pepper flakes (or chipotle pepper flakes)
- 1-2 tbsp milk
I also tried this recipe with blue cheese added to the dough, which makes it even more rustic with a gourmet flair.
Place all of the ingredients, except milk, into a mixing bowl. Crumble butter into flour by hand and mix well. Add 1 tbsp milk and work together with all the ingredients.

If you cannot form a ball the you can easily roll out, add a little more milk. Once you can form a ball (I needed about 1 1/2 tbsp milk) dust counter-top with flour and also dust rolling pin. Roll out dough to about 1/3 cm (1/6 inch) and using a ravioli cutter or knife cut out squares or any other shape you’d like.
Preheat oven to 350F (170C); line baking sheet with parchment. Place unbaked cracker on lined baking sheet and bake for 12-15 minutes or until golden.
Serve with your favorite soup or on its own.
