I’m currently working on my new cookbook, but I guess I’m always working on a new cookbook 🙂 Well, I started grouping together recipes that I will include in it.
One of my old time favorites is my Meatloaf Wellington that I came up with many years ago after my family kept asking for Beef Wellington and Meatloaf. They could never agree so I decided to come up with something new that everyone will equally love.

So a new dish was born that everyone finally agreed upon. You can use ground pork, beef, chicken or turkey as this recipe is not set in stone. You can add your own favorite spices and make it a family favorite at your house.
